Last Hour from 5.30 to 6.30 pm. After bowling 5 overs , there is interruption from 5.50 to 6.10 The captain of the batting side declares innings closed at 6.05 pm. What shall be the start time and how many least overs to be bowled ? Do you take both interruption or interval calculation here ?

Assuming you're playing by the Laws, as opposed to Regulations for your competition / match...
Start time must be 6.15 - 10 minutes after the declaration. Anything earlier than that infringes on the side to bat's right to 7 minutes of rolling.
I would say that, as there's been a change of innings, you're entitled to take the approach in Law 16.8, perform 2 calculations, and use the result which gives the greater number of overs remaining.
Time Remaining: 6.15 restart to 6.30 close = 15 minutes = 5 overs to bowl.
Overs remaining: 15 overs left to bowl. Total of 25 minutes lost = 8 overs lost. 15-8 = 7 overs to bowl
